One of my favorite salad recipes. Sweet, yet tart.

Recipe Ingredients for Orange Almond Salad

1 head Lettuce, Cos Or Romaine
3 cups Spring Mix
2 cup, diced Celery
4 medium (4-1/8" long) Onions, Spring Or Scallions
22 oz Mandarin Oranges
1.5 cup, sliced Almonds
6 tsp Sugars, Granulated
12 tsp No Calorie Sweetener
1 tsp Salt, Table
1 dash Pepper, Black
4 serving Vinegar
0.5 cup Vegetable Oil, Canola
2 tbsp Parsley, Dried
1/4 tsp Sauce, Ready-to-serve, Pepper, Tabasco

Recipe Directions for Orange Almond Salad

  1. Combine Splenda, pepper, salt, tarragon vinegar, canola oil, parsley, and tabasco sauce in blender and blend until smooth.

  2. Cook almonds in iron skillet with sugar until sugar is melted. Place on cookie sheet or aluminum foil until cooled. Once cooled, break into small pieces.

  3. Combine the rest of the ingredients with dressing and let marinate 10 minutes before serving.
