Recipe Ingredients for Oprah's Breakfast Fritatta

2 c egg whites
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons extra-virgin olive oil
1 1/2 zucchini , thinly sliced
8 oz mushrooms
1 sliced Vidalia onion
1 medium tomato , peeled and chopped
1 clove garlic , minced

Recipe Directions for Oprah's Breakfast Fritatta

  1. preheat oven to 350

  2. whisk egg whites, parm, .25 t pepper and .5 t salt

  3. saute half the zucchini in .75 T olive oil. repeat with other half.

  4. remove from pan

  5. saute onion, tomato and garlic in .5 T olive oil

  6. add zucchini back into pan

  7. add egg mixture to pan and let set for 3 mins

  8. bake for 15 min
