Recipe Ingredients for Opples & Bononos Bread

1 3/4 cups all purpose flour
2 tablespoons all purpose flour
1 1/2 cups granulated sugar
1/2 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 large bananas
2 eggs
1/3 cup milk
1 teaspoon white vinegar
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract

Recipe Directions for Opples & Bononos Bread

  1. Adjust the rack to the lower third of the oven; preheat the oven to 350 degrees.

  2. Grease and flour loaf pan.

  3. Sift 1 cups plus 2 tablespoons FLOUR, 1 cups SUGAR, teaspoon BAKING POWDER, 1 teaspoon BAKING SODA, and teaspoon SALT into a large bowl.

  4. # Optional: toast 1 cup WALNUTS, chop fine, and stir into flour mixture.

  5. Mash 2 BANANAS (for 1 cup mashed banana) in mixing bowl.

  6. Add 2 EGGS, cup plus 1 tablespoon BUTTERMILK, cup APPLESAUCE, and 1 teaspoon VANILLA EXTRACT into mashed banana.

  7. Stir banana mixture into flour mixture until just combined.

  8. Spoon the batter into prepared pan. Bake for 1 hour and 15 to 20 minutes, or until a cake tester inserted in the loaf comes out clean.

  9. Cool 10 minutes in the pan, then turn the loaf out onto a rack to cool completely.
