Lighter version of the original salsa egg sandwich, to eat when you've overdone calories, or for a quick bite.

Recipe Ingredients for Open-Faced Salsa Egg Sandwich

1 slice whole wheat bread
1 egg
1 tbsp salsa
1/2 tsp margarine
1 tsp mayonnaise

Recipe Directions for Open-Faced Salsa Egg Sandwich

  1. Whisk together salsa and egg.

  2. Melt margarine in an omelet pan over med/high.

  3. Pour in egg mixture and cook until just set.

  4. Meanwhile, toast bread if desired and top with mayonnaise.

  5. Transfer egg mixture to bread and serve warm.

  6. NOTE: If you add cheese, more salsa, etc., don't forget to log the extra calories! This dish can go from light to really unhealthy very quickly.
