1 pc. toasted whole grain bread, w/ mustard, low-fat mayo, 3 oz beef, 1 oz cheese, topped w/ arugula salad tossed w/ olive oil/lemon

Recipe Ingredients for open faced roast beef sandwich

3 oz. roast beef
1 slice whole grain bread
1 oz semi-soft goat cheese
2 cup arugula
1 mushroom
1 tomato
2 tsp. olive oil
2 tsp. lemon juice
2 tsp. dijon mustard
2 tsp. reduced fat mayonnaise

Recipe Directions for open faced roast beef sandwich

  1. place 1 tsp. oil in pan, heat to med. high, place bread in skillet, leave for a minute or 2, just to toast, then before turning over, spread on desired mayo, mustard, top w/ beef, cheese, then place back in pan and cover, til'bread toasts and cheese is melty. careful not to burn.

  2. toss remaining ingredients w/ s&p to taste, place on top of hot sandwich.
