Like a Reuben, only with turkey instead of corned beef. Served Open Faced style.

Recipe Ingredients for Open Faced "Rachel" Sandwich

1 slice light bread - rye if available (about 45 calories)
1/4 cup sauerkraut, drained
1 serving Oscar Mayer Turkey (about 5 slices)
1 tbsp Fat Free Thousand Island Dressing
1/2 tbsp Fat Free margarine spread
1 serving Swiss Cheese (about 80 calories)

Recipe Directions for Open Faced "Rachel" Sandwich

  1. Spray skillet with nonstick cooking spray and heat over medium heat.

  2. Spread margarine on one side of bread and place bread (buttered side down) in skillet.

  3. Spread Dressing on bread and top with turkey, cheese, and sauerkraut.

  4. Cook until bread begins to brown on bottom.

  5. Cover skillet for 1 minute to make sure cheese melts and turkey heats through.
