Recipe Ingredients for Onion Upside Down Cornbread

1 tablespoon corn oil
2 large onions
1/4 teaspoon dried thyme
1 small red bell pepper
1 cup corn kernels
1 1/2 cups cornmeal
1 1/2 cups whole wheat flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon black pepper

Recipe Directions for Onion Upside Down Cornbread

  1. In 8 or 10-inch skillet, heat oil.

  2. Saute onions until they are deeply browned, stirring frequently over medium-high heat, about 8 to 10 minutes.

  3. Stir in the thyme, red pepper, and corn kernels.

  4. Set aside.

  5. In large bowl, combine the cornmeal, flour, baking powder, baking soda, salt, cracked pepper, and cayenne.

  6. In food processor, combine the stock, tofu (or ground turkey), oil, barley malt syrup, and vinegar, and spin until the liquid is frothy, about 2 minutes.

  7. Stir this liquid into the dry ingredients, just until all of the flour is absorbed.

  8. Pour batter over the onions and bake on the middle shelf of an oven preheated to 375 until the top springs back to a gentle touch and a skewer inserted into center comes out without crumbs attached.
