French onion soup with portobello mushrooms. Make a big pot and freeze it for later.

Recipe Ingredients for Onion Soup a la Tina

8 onions, sliced
2 mushrooms, portobello
2 cloves garlic, minced
1/3 cup olive oil
2 tablespoons all-purpose flour
8 cups beef stock
1/4 cup red wine
1/2 teaspoon dried thyme
1 Salt and pepper
8 slices provolone cheese
8 slices french bread

Recipe Directions for Onion Soup a la Tina

  1. Saute onions in oil over low heat until tender and golden yellow.

  2. Add chopped portobello mushroom and cook until the mushroom is almost tender.

  3. Add minced garlic.

  4. Sprinkle flour over onions, cook a few minutes more, browning the flour well.

  5. Add stock and red wine and bring to a boil, add thyme and bay leaf.

  6. Reduce heat, cover, and simmer gently for 20 minutes or so. Add salt and pepper, to taste.

  7. Meanwhile, slice French bread into 3/4-inch slices and butter both sides.

  8. Toast slices on griddle until golden brown.

  9. Ladle soup into an ovenproof bowl, add toasted bread and cover with cheese.

  10. Place ovenproof bowl on a baking sheet.

  11. Bake at 350 degrees F for 5 minutes, then under a hot broiler for 2-3 minutes or until the cheese is brown and bubbly.
