To make this lower in saturated fat, replace the half and half with skim milk or soy milk.

Recipe Ingredients for Onion Soup

4 large onions, chopped
4 cups vegetable broth, (I use not ckn brand)
1 tsp tarragon
1 cup half and half
1 tsp pepper
1/2 tsp salt
1 tbsp garlic
2 tbsp extra virgin olive oil

Recipe Directions for Onion Soup

Chop onions. Heat a soup pot (med-low heat), add oil and heat oil, add onions and garlic, and allow to cook for a loooooong time to caramelize. Add everything else except the half and half. Simmer for 20 mins. Turn off heat and add half and half. Serve with cheese toast.
