Easy rich soup. Great for a first course or as a light meal with a salad.

Recipe Ingredients for Onion Soup

4 quarts chicken stock
8 large yellow onions, sliced
12 oz. baguette, sliced in 1 inch slices
8 oz. shredded colby cheese

Recipe Directions for Onion Soup

  1. Saute onions in a large pot, in oil, on low heat for an hour. Stir occasionally.

  2. When onions are wilted and golden brown, add stock.

  3. Heat until boiling. Melt cheese over bread under broiler. Place in deep bowl. Ladle soup over bread.
