Onion Rice Recipe

Modified from white rice to brown rice.

Recipe Ingredients for Onion Rice

1 Tspn extra virgin olive oil
1 onion, red, chopped
1 cup brown rice
1 tsp. black pepper
2 cups chicken broth
14 ounce diced tomatoes, no salt added, drained

Recipe Directions for Onion Rice

  1. Heat oil in saucepan over medium heat.

  2. Stir in the onion, and cook until almost tender.

  3. Stir in tomatoes.

  4. Stir in rice and continue cooking until coated with oil. When onion is tender and rice begins to brown lightly, season with pepper and pour in the broth.

  5. Bring to a boil.

  6. Reduce heat to low, cover, and simmer 20 minutes
