Recipe Ingredients for Onion Rice Pilaf

1 large onion, chopped
3 cloves garlic, minced
2 tbsp extra virgin olive oil
2 cups uncooked basmati rice
2 1/2 cups chicken stock

Recipe Directions for Onion Rice Pilaf

  1. Heat the olive oil in a skillet over medium heat. Stir in the onion, and cook until soft and translucent. Add garlic and cook one minute longer.

  2. Add stock and bring to boil. Set heat to low, cover and simmer for 20 minutes then turn off burner and let rice sit covered for an additional 10 minutes.
