Recipe Ingredients for Onion and Pea Risotto

4 cups vegetable broth
2 cups chopped onions, sweet
4 garlic cloves
2 teaspoons olive oil
1 1/2 cups Arborio rice
1/2 cup chopped parsley, fresh
1 tablespoon thyme, chopped fresh
1 teaspoon lemon peel, grated
1 salt to taste
1 pepper to taste
3/4 pound snap peas
12 ounces Quorn pieces, chicken style

Recipe Directions for Onion and Pea Risotto

  1. Heat the broth to a simmer. Combine the onions, garlic and oil in a large, heavy, preferably non-stick, pan and sauté on medium heat for 5-6 minutes, until the onions soften. Using a wooden spoon to avoid breaking the grains, add the rice, stirring until it is coated with oil.

  2. Ladle about a cup of the broth into the rice and stir constantly for several minutes, until the liquid has been absorbed. Continue to stir frequently, adding 1/2 cup of broth every 2-3 minutes for the next 20 minutes, until all of the broth has been added and absorbed and the rice is tender but firm. Add the peas for the last few minutes. Remove from the heat and stir in the parsley, thyme, lemon peel and chicken substitute. Add salt and pepper to taste. Serve immediately.
