Great little Bagels. Good with or without the onion. May need to bake longer than 20 minutes - more like 30-35.

Recipe Ingredients for Onion-Parmesan Mini Bagles

4 cups unbleached flour
2 tablespoons dried minced onion
1 tablespoons sugar
1 teaspoon sugar
1/4 oz active dry yeast
1 teaspoon salt
1 1/2 cups warm water
6 cups water
1 tablespoon water
1 egg white
1/2 cup parmesan cheese

Recipe Directions for Onion-Parmesan Mini Bagles

  1. combine 2 cups flour, onion, 2 Tbs sugar, yeast and salt in large mixing bowl. Add 1.5 cups warm water. Beat on low speed of electric mixer 1 minute or until blended. Increase speed to high; beat 3 minutes.

  2. On lighly floured surface, knead in enough remaining flour to make stiff dough. Cover with plastkc wrap; let rest 10 minutes.

  3. Spray 2 baking sheets; set aside. Divide dough into 24 equal portions; shape each into ball. Press whole in center to form 1.5 inch hole. Place on prepared baking sheets. Cover with plastic wrap and clean cloth. Let rise in warm place 30 minutes or until doubled in bulk -about 45 minutes

  4. Prehat broiler. Broil bagels about 5 inches from heat source 2-3 minutes, turning once (should not get brown)

  5. Bring 6 cups water and remaining 1 tsp. sugar to a boil in Dutch overn. Drop 7 or 8 bagels into boiling water micture; simmer 3 minutes, turning once. Drain on paper towels. Repeat with remaining bagels.

  6. Preheat oven to 375. Place bagels on baking sheets sprayed with cooking spray. Beat egg white and remaiing 1 Tbs. water in small bowl; bursh tops with micture. Sprinkle with Parmesan cheese. Bake about 20 minutes or until golden brown (baking may take longer 30-35 minutes).
