Really good veggietarian onion and mushroom soup. :)

Recipe Ingredients for Onion and Mushroom soup

4 cup Corn, Sweet, Yellow
4 cube Bouillon Cubes
8 ounce Mushrooms, Portabella
3 large Onions
8 cup (8 fl oz) Water
6 1tsp Olive Oil

Recipe Directions for Onion and Mushroom soup

Take two large onions, take off outer peel. Put one through a food processor (it will look weird, but in the end it all works out) and finely chop the other one. Saute finely chopped onion in three tablespoons of olive oil until slightly carmalized. Once slightly golden brown, add food processed onion (it will look like goop) to the finely chopped onion. Add a sprinkle of parsley. Cover and cook over low heat for ten minutes, stirring occasionally. Take out of pot and into separate cooking bowl. (This is all by preference. I preferred to minimize the number of pans I was using, because I was using a cast iron pan and really didn't want to wash a ton.. You could just use another pan). In the pan you just used for onions, take 8 ounces chopped mushrooms and saute them in two tablespoons of olive oil until softer, approximately 8 minutes on high. When soft, turn off heat. Put six cups of water, three vegetarian vegetable bouillon cubes and one cup of cooking wine into a large soup pot. Add onions and mushrooms, bring to boil. Here is where I tried the soup, realized it was really good, then also realized it needed a little more bulk to feed my entire family plus guests. I added about one cup of thawed frozen corn and two cups of thawed frozen peas, but I would recommend sticking with just a few cups of corn. Add parsley and basil to taste. Cook over low, stirring occasionally. I left it on for an hour or so, and served it with vegan foccacia bread.
