Having lived with an onion hater for a long time now, you make the best of what you have without onions. This is a hearty, and fairly healthy dish. It could probably be healthier with fat free cheese, but then that's not REAL cheese, is it?

Recipe Ingredients for Onion Hater's Lasagne

1/2 lb (80/20) ground beef, drained and rinsed
1/2 c. zucchini, sliced
1/4 c. yellow squash, sliced
15 oz. diced tomatoes
16 oz. 1% cottage cheese
1 egg
2 c. spinach
1 tsp. minced garlic
1 1/2 c. mozzarella cheese
8 oz. spaghetti sauce
2 T. black olives
6 oz. lasagne, uncooked
6 T. Parmesan cheese, grated

Recipe Directions for Onion Hater's Lasagne

Pre-heat oven to 325. Spray pan with non-stick spray. Put 3 uncooked noodles in bottom of pan. Brown ground beef, then drain and rinse in hot water. Return beef to pan over medium heat. Add zuke, squash, spinach, black olives, garlic, diced tomatoes and sauce. Heat until spinach wilts. Remove from heat. In a small bowl, mix cottage cheese with egg and 4 T. Parm. Pour 1/2 of sauce mixture on top of noodles in bottom of pan. Spread 1/2 cottage cheese mixture on top of sauce mixture, then 1/2 mozzarella. Add remaining noodles and layer as before. Spray aluminum foil with non-stick spray on one side and cover pan (sprayed side will keep cheese from sticking to the foil during cooking). Bake 1 hour and remove from oven. Let stand 15-20 minutes before serving.
