Recipe Ingredients for Onion & Greens Frittatta

1 onion
4 eggs
1/2 c part skim ricotta cheese
3 c mustard greens
1 c cauliflower
1/4 c fresh garlic
1 oz parmesan cheese
1/2 c skim milk

Recipe Directions for Onion & Greens Frittatta

  1. saute onion and any other veggies, add chopped greens to wilt

  2. mix eggs, milk & ricotta

  3. combine with veggies, pour in 10" pie plate

  4. bake at 350 for about 30 minutes or until a knife inserted comes out clean.
