Recipe Ingredients for onion gratin

3 lb potatoes
6 large onions
1 tbsp olive oil
1/2 cup butter
1 cup veg broth
1/2 cup water
1 vegetable bouillon cube
1 1/4 cup skim milk
3 eggs
1/2 cup parmesan cheese
1/2 cup gruyere cheese
2 tbsp bread crumbs

Recipe Directions for onion gratin

  1. Boil potatoes.

  2. Place onions, oil, half butter, broth, water, stock cube, salt, and pepper in a saucepan. Cover and simmer until onions are soft - 35 min.

  3. Peel potatoes. Chop coarsely. Mash.

  4. Heat milk. Add potatoes and remaining butter (reserve 1T). Make a smooth puree. Remove from heat. Let cool 10 min.

  5. Combine puree iwth eggs, salt, and pepper. Stir in par, cheese (reserve 2T) and mix well.

  6. Butter ovenproof dish. Spread with half potato mixture. Drain cooked onions. Spread 3/4 over potatoes. Sprinkle with gruyere and cover with remaining potatoes. Top with remaining onions. Sprinkle with bread crumbs and parmesan.

  7. Bake in oven - 350, for 25 min.
