Focaccia is versatile. Add whatever toppings you want. Serve with a green salad and wine.

Recipe Ingredients for Onion Focaccia

1 t yeast
1 c warm water
1/2 t salt
1 T sugar
2 T olive oil
2 c all-purpose flour
1 c all-purpose flour
1 lbs onions
2 T olive oil
1/4 c golden raisins
4 anchovies, drained and chopped

Recipe Directions for Onion Focaccia

  1. Place yeast, water, salt, sugar, olive oil, and flour in a bread maker. Set to dough setting.

  2. When dough is done, coat bottom of a 10 X 15" pan with cooking spray. Place dough in pan. Press and stretch dough to fill pan evenly. (If dough is too elastic, let rest a few minutes and stretch again; repeat as needed.) Cover pan lightly with plastic wrap and let dough rise in a warm place until about doubled, 45 to 60 minutes.

  3. Meanwhile, make the onion topping:

  4. Slice onions in half lengthwise, then cut into 1/4-inch thick slices. In a 10 X 15" pan, mix onions and 2 T olive oil. Bake in a 450-degree oven until onions are limp but not brown, about 20 minutes. Stir in golden raisins and chopped anchovies.

  5. When the dough has doubled, drizzle 1 T olive oil over dough. With your fingers, gently press dough down all over, forming dimples in the surface. Also gently push dough to fit into pan corners. Evenly cover dough with onion topping. Sprinkle lightly with salt and pepper.

  6. Bake in a 400-degree oven until dough is well browned on edges and bottom, 35-45 minutes (if topping is browned before bread is done, lightly cover with foil for last 10 to 15 minutes.)

  7. If made ahead, cover and hold up to 8 hours at room temperature. To reheat, bake lightly covered, in a 350-degree oven until warm to touch, 10 to 15 minutes.
