This simple but flavorful risotto is quite versatile and quickly made.

Recipe Ingredients for Onion and Feta Risotto

4 cups vegetable broth
2 cups onions, chopped
4 garlic cloves, minced
2 teaspoons olive oil
1 1/2 cups arborio rice
1/2 cup reduced fat feta, crumbled
1/2 cup fresh parsley, chopped
1 tablespoon fresh thyme
1 teaspoon lemon peel (optional)
1 salt and pepper to taste

Recipe Directions for Onion and Feta Risotto

  1. In a small saucepan, heat the vegetable broth to a simmer.

  2. combine the onions, garlic, and oil in a large, heave, preferable nonstick, pan and saute on medium heat for 5 or 6 minutes, until the onions soften.

  3. Using a wooden spoon to avoid breaking the grains, add the rice, stirring until it is coated with oil.

  4. Ladle about a cup of the broth into the rice and stir constantly for several minutes, until the liquid has been absorbed. Continue to stir frequently, adding 1/2 cup of broth every 2 to 3 minutes for the next 20 minutes, until all of the broth has been added and absorbed and the rice is tender but firm.

  5. Remove from the heat and stir in the feta, parsley, thyme, and lemon peel, if using. Add salt and pepper to taste.

  6. Serve immediately.
