A delicious and healthy take on shepards pie! High in protein and vitamins.

Recipe Ingredients for One Serving = 1/8th pie

2 Sweetpotato
1 tbsp margarine
1 tsp salt
1 egg
1 lb ground turkey
15 oz petite diced tomatoes
1 medium onion
1 zuchinni
1 squash
3 large mushrooms
1/4 cup Reduced Fat Mild Cheddar Shredded Cheese
1/4 cup chicken broth

Recipe Directions for One Serving = 1/8th pie

  1. Preheat Oven to 375

  2. For Topping:

  3. Skin and boil the two potatoes until soft

  4. beat them with one egg and enough butter to get to mashed potato consistency

  5. For Filling:

  6. Brown meat, drain

  7. Sautee vegetables in water and/or chicken broth until soft

  8. Add back beef

  9. Add 1/4 cup Chicken broth

  10. saute until thick

  11. use corn starch to thicken if needed

  12. Put Filling in bottom of large backing pan

  13. layer with shredded cheese

  14. top with mashed potato topping

  15. Bake 250-35 minutes @ 375
