Recipe Ingredients for One Pot: Sausage and Broccoli Quiche

8 servings Pillsbury refrigerated pie crust (one crust)
2 T. olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 1/2 c. broccoli, chopped (you can use diced broccoli stem)
6 oz. mushrooms, chopped
2 links chicken & apple sausage, quartered lengthwise and sliced
6 eggs
1 c. whole milk
1 T. fresh parsley
1 1/2 tsp. salt, to taste
1/2 tsp. pepper, to taste
1/4 c. cheddar cheese
1/4 c. mozzarella cheese
1 small tomato, sliced (or several cherry tomatoes, sliced)

Recipe Directions for One Pot: Sausage and Broccoli Quiche

  1. Take pie crust out of the refrigerator to let it soften slightly.

  2. Heat olive oil in a pan; sauté onions until they soften. Stir in garlic, mushrooms, broccoli, and sausage cook for 3-4 minutes until vegetables soften. Add 3/4 tsp. salt and 1/4 tsp. pepper (to taste). Remove from heat and set aside.

  3. In a mixing bowl, beat eggs lightly then stir in milk, parsley, 3/4 tsp. salt and 1/4 tsp. pepper (to taste).

  4. Place pie crust into a 9-inch deep dish pie pan.

  5. Transfer cooked filling into prepared pie crust.

  6. Scatter cheese on top.

  7. Fill in egg mixture and top with tomato slices.

  8. Bake in at 350F for 40-45 minutes or until egg is set.
