Recipe Ingredients for One-Pot Pork Stroganoff

10 oz. boneless pork chops
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, crush
1 tbsp all-purpose flour
2 tbsp tomato paste
2 cups chicken broth, reduced sodium
4 1/2 oz. white mushrooms, sliced
1 large bell pepper, seeded and diced
1/2 tsp ground nutmeg

Recipe Directions for One-Pot Pork Stroganoff

  1. Trim away any excess fat and membrane from the pork, then cut the meat into slices 1/2 in. thick.

  2. Heat the oil in a large pan over medium heat, then add the pork, onion, and garlic and cook for 4-5 minutes, or until lightly browned.

  3. Stir in the flour and tomato paste, then pour in the stock and stir to mix thoroughly.

  4. Add the mushrooms, green bell pepper, salt and pepper to taste, and nutmeg. Bring to a boil, then cover and let simmer for 20 minutes, or until the pork is cooked through.

  5. Remove the pan from the heat and let cool slightly, then stir in the yogurt. Serve the pork and sauce on a bed of rice, topped with an extra spoonful of yogurt and garnished with a dusting of nutmeg.
