Well, not as low carb as I had thought originally, but still only 9g vs a regular muffin, and pretty easy to make

Recipe Ingredients for One Minute PB Low Carb Muffin

2 tbsp peanut butter
2 tbsp cream cheese
1 tbsp butter
1 egg white
1 tsp baking powder
1/2 tsp vanilla
2 g splenda
1 dash cinnamon

Recipe Directions for One Minute PB Low Carb Muffin

melt pb, cream cheese, and butter in microwave for 30 secs. stir. add baking powder, 1 packet of splenda, vanilla and egg white. Microwave another 1:15. I like to cut in half and spread a little butter with cinnamon and the other packet of splenda on top. Not a terrible breakfast.
