Recipe Ingredients for one dish rigatoni

16 oz uncooked rigatoni
1 large sweet potato, cut in small pieces
6 c raw chard, chopped
3 tbsp olive oil
1/2 medium red onion, sliced
1/2 c chopped walnuts
1/4 c fresh basil
3 oz goat cheese

Recipe Directions for one dish rigatoni

  1. Cook pasta according to package directions. Keep warm.

  2. Heat 1 Tbsp olive oil over medium high heat. Add sweet potato and saute 8 minutes or until nearly tender. Add onion and saute 5 minutes or until it begins to brown. Add chard and cook just until wilted.

  3. Combine pasta, sweet potato mixture, remaining 2 Tbsp oil, and remaining ingredients in a large bowl.
