Yummy egg dish for any meal. Feel free to sub any veggies you have on hand. Reheats very well! (A-)

Recipe Ingredients for One-Dish Fritatta

4 eggs, lightly beaten
1/2 cup fat free miracle whip
1/2 cup skim milk
2 cups hash brown potatoes, frozen
1 cup ham, chopped
2 cups broccoli florets
1 medium onion, sliced
1 medium red pepper, cut into strips
1 cup 2% cheddar cheese, shredded

Recipe Directions for One-Dish Fritatta

  1. Preheat oven to 400F

  2. Combine eggs, mayo and milk in greased 2L/2qt shallow baking dish

  3. Add hash browns, ham and veggies. Mix until well blended.

  4. Sprinkle with cheese.

  5. Bake 40 min or until centre is set.
