This tomato and spinach omlette is light and fluffy because the egg is combined with a little skim milk.

Recipe Ingredients for Omlette with Tomato and Spinach

1 egg
1/4 cup skim milk
1/2 tomato, chopped
1 cup spinach leaves
1 salt to taste
1 pepper to taste

Recipe Directions for Omlette with Tomato and Spinach

  1. Beat the egg and skim milk together and pour into a non-stick frying pan over medium heat. Let cook slowly over medium heat.

  2. When mostly cooked, add tomato and spinach. Continue cooking until egg is done.

  3. When done, fold egg in half, with vegetables on the inside of the egg.

  4. Add salt and pepper to taste. Serve immediately.
