This is a vegy omlette done with leeks and garlic; served with fresh tomatoe on the side..

Recipe Ingredients for Omlette w/leek & tomatoe

2 eggs, whole scrambled
1 egg white, scrambled
1 (200g) leeks
4 mushrooms, large
1 large tomatoe

Recipe Directions for Omlette w/leek & tomatoe

  1. Dice and sautee the leeks, together w/some garlic.

  2. Add the diced mushrooms

  3. Scramble 2 whole eggs and 1 egg white.

  4. Add a tablespoonful of water, and scramble again.

  5. Add the egg mixture to the leek mixture.

  6. When one side is done flip it.

  7. Sprinkle some salt, and pepper.

  8. When the other side is done, too, take it onto a plate.

  9. Slice a fresh tomatoe, sprinkled with oregano.

  10. Make a tall glass of tea to accompany this plate and enjoy...
