Vegetable filled omlettes layered with creamy ricotta cheese to make a "cake".

Recipe Ingredients for Omlette "Cake" with Ricotta filling

4 eggs
2 c egg whites
1 T olive oil
1 small red onion, diced
2 cloves garlic, minced
2 medium zucchini
1 cup swiss chard, cut into 1-inch strips
1 red bell pepper, roasted and chopped
1 tsp salt
1 tsp pepper
3 T fresh basil
1/4 ounce fresh oregano (1 tsp)
1 cup ricotta
1 T fresh parsley, minced
1 T fresh thyme, minced

Recipe Directions for Omlette "Cake" with Ricotta filling

  1. Turn on your broiler.

  2. In a small bowl, mix the ricotta with 1/4 tsp salt, 1/4 tsp pepper, parsley and thyme. Add some lemon zest (optional). Set aside.

  3. Whisk together the whole eggs and egg whites in a large (4 cup) measuring cup and set aside. You should have 3 cups total liquid.

  4. Heat 1 tsp of olive oil in a small non-stick pan over medium low heat. Add the onions and garlic and cook for 2-4 minutes or until onions begin to soften. Take the cooked aromatics out of the pan and separate into 3 equal portions. Put one portion back in the pan along with 1/3 of the zucchini, chard and bell pepper. Add 1/4 tsp salt to the vegetables and cook until they begin to soften. Add 1 cup of the egg mixture to the pan and let cook until set around the edges.

  5. Place the pan under the broiler and cook until the eggs are just set.

  6. Slide the cooked omlette onto a plate and reserve.

  7. Add the second 1/3 of the onion and garlic mixture back into the pan along with another 1 tsp olive oil.

  8. Add 1/3 of the zucchini, chard and roasted red pepper into the pan along with 1/4 tsp salt. Cook until the vegetables soften and then add 1 cup of the egg mixture.

  9. Cook until set around the edges.

  10. Place the pan under the broiler and cook until the eggs are just set.

  11. Slide the cooked omlette onto a plate and reserve.

  12. Repeat with the last 1/3 of aromatics, vegetable and eggs.

  13. While the last omlette is cooking, spread 1/2 of the ricotta mixture onto the first omlette. Top this with the second omlette and spread the second 1/2 of the ricotta mixture on top of this second omlette.

  14. Once the third omlette is done, place it on top of the omlette and ricotta stack.

  15. Slice into 4 pieces and serve.
