Delicious break fast. Easy to portion control and grab before going to work. If you enjoy cold eggs, you will love this.

Recipe Ingredients for Omlete Muffins

0.7 cup Milk, Reduced Fat, Fluid, 2% Milkfat
6 large Egg, Whole
1 cup, chopped Peas, Edible-podded (sugar snap peas)
0.2 cup, chopped Onions
0.5 cup, chopped Peppers, Sweet, Red
1 wedge (1.33 oz) Feta Cheese
1/4 cup Roasted Red Pepper Pesto
0.5 cup Spinach

Recipe Directions for Omlete Muffins

  1. Lightly saute the onions and peas with garlic. Mix peppers, onions and peas in a bowl. Scramble eggs with milk, salt, and pepper to taste. Mix vegetables with eggs.

  2. fill muffin treys 1/4 way with egg mixture. Add a layer of spinach and feta cheese. Add rest of egg mix to muffin trays.
