A wacky take on a Mexican omlete. Putting it into a wrap to make a yummy breakfast-for-dinner meal!

Recipe Ingredients for Omlete for Dinner - Mexican Wrap

1/2 cup black beans
2 egg whites, scrambled
1 tomato, sliced
1 tbsp corn
1 tbsp salsa
1 tsp sour cream
1 tbsp cheddar cheese, grated
1 tortilla

Recipe Directions for Omlete for Dinner - Mexican Wrap

Scramble the eggs, mix in the beans, corn and salsa. Cook until hot. Brown tortilla, and add the cooked mixture. Top with tomato, sour cream and cheese. Pair with a salad (and a light dressing) for more of your 5-a-day!
