Single-serving omlet with tomatoes, peppers, onion, and cheese - cooked in the microwave - with less than 70 calories!

Recipe Ingredients for Omlet for One

1/2 oz green pepper, chopped
1/2 oz onion, chopped
1 1/2 oz tomato, chopped
1/4 tsp low-fat margarine
1/4 cup Fit & Active egg substitute
1 tsp 2% milk
5 g shredded reduced fat cheese, divided

Recipe Directions for Omlet for One

  1. Spray microwave omlet maker with non-stick cooking spray. (Can use pasta dish or any low bowl instead.)

  2. Put onions and peppers in microwave-safe bowl with margarine, and microwave on low 2-3 minutes (or use "fresh soft veggies" setting.) Put tomatoes on top, DO NOT STIR, and microwave an additional 2 minutes on low.

  3. Stir vegetables, pour into prepared omlet maker or dish. Gently distribute over bottom.

  4. Combine egg substitute and milk. Beat lightly. Set aside a pinch of cheese, and add remainder to egg mixture and mix well.

  5. Pour into omlet maker/dish, gently arrange so egg mixture, veggies and cheese are evenly distributed. Cook in microwave on high for 1 minute. (If using pasta dish, microwave 40 seconds, remove, fold omlet in half using spatula and return to microwave to cook for an additional 20-30 seconds.)

  6. Turn omelt onto serving plate. Sprinkle with pinch of cheese set aside earlier. Serve.

  7. NOTE: Try with salsa on the side - this adds an additional 5 calories per tablespoon of salsa. YUM!
