Omelet using whisked to foam egg whites

Recipe Ingredients for Omelette

1 oz Cheese
4 egg white
1 egg
1 oz green chili
4 green onion
2 oz crimini mushrooms
2 tbsp brummel and brown

Recipe Directions for Omelette

  1. Shred zucchini and stir into whipped 2 egg whites. Add Parmesan and Romano cheese. Brown in 1 tbsp brummel and brown.

  2. Whisk egg yolk, in separate bowl whisk egg whites, fold yolk into egg whites,

  3. Saute onions, green chili's and mushrooms in brummel and brown. Remove to plate, Brown eggs in brummel and brown on low heat cover for 1 minute or until eggs are set, top with onion, chili, mushrooms and cheese. Fold over onto plate. Serve with hashbrowns.
