Portion is for half an omelette - snack-/ sidedish-sized - adjust accordingly.

Recipe Ingredients for Omelette - Ham, Veg & Cheese

3 1/2 tsp extra virgin olive oil
20 g red bell peppers, diced
45 g sliced lean ham, chopped
120 g mushrooms, sliced
60 g frozen green beans, chopped
55 g canned corn
40 g tomatoes, diced
300 g eggs
80 g Q Extra Light Milk
45 g SYNN´┐ŻE Lett Gulost
1/3 tsp salt
1 pinch lemon pepper
1/8 tsp oregano
1/4 tsp dried parsley
1/4 tsp dried chives

Recipe Directions for Omelette - Ham, Veg & Cheese

  1. Heat 1/2 tsp oil in a frying pan. Add in peppers, ham & mushrooms. Cook till mushroom begin to soften.

  2. Add a pinch of salt and the beans. Stir and cook for 2 minutes. Remove into a bowl and add in corn and mushrooms. Set aside.

  3. Heat 1.5 tsp oil in a clean frying pan.

  4. Whisk eggs in two batches (3 at a time) with half the milk for each batch until frothy. Pour into pan.

  5. Spoon on half of the sauteed ham & veg onto one half of the omelette. Top with half of the grated cheese.

  6. When egg is almost set, fold side of omelette without topping over to form a half-moon/semi-circle. Cook for 2-3 minutes if you want it more set, or divide and serve.

  7. As part of a larger meal, serve with good, wholegrain/rye bread, a large salad and a baked potato. If making this recipe into 2 portions, serve with wholegrains/rye rolls, garlic butter and a side salad.
