This is a great morning start with fresh spinach, mushrooms, onions and feta cheese.

Recipe Ingredients for Omelete, mushroom and spinach

1 egg
2 tbsp Feta Cheese
1/2 cup mushrooms, uncooked
1/2 cup spinach, raw
1 tbsp onion, diced

Recipe Directions for Omelete, mushroom and spinach

  1. Spray a non-stick skillet with pan spray.

  2. Clean and slice mushrooms, onions and spinach into pan. Saute until the water is cooked out and onions are soft (about 3 minutes).

  3. Whisk egg and pour over sauteed vegetables.

  4. Sprinkle on feta cheese.

  5. Add salt and pepper to taste.

  6. Cover and cook on medium low for about 5 minutes or until cooked through.

  7. Fold over and serve.
