This yummy breakfast has lots of nutritional pluses. It is high in the mineral selenium, which protects cells and helps the thyroid do its job. The egg is a complete protein, but there isn't enough to have a significant amount of cholesterol. The bread is made partially with whole wheat flour, which provides fiber, which make you feel fuller with less. The green onion also contains fiber; as well as calcium, which helps build strong bones; iron, which helps make blood; vitamin A, which improves eyesight; and vitamin C, which strengthens the immune system. This recipe has the ingredients for a whole loaf of bread, which should be cut into 16 slices. This leaves enough omelet for each sandwich to have 1/4 of an egg. It is a breakfast so it goes with milk, orange juice, coffee, bananas, and other morning foods.
