eggs, mixed veggies (whatever is available) and just enough cheese to taste. I like to use nonfat plain yogurt as a sour cream substitute and have some on the side.

2 large Egg, Whole

Recipe Directions for omelet

lightly saute any veggies you don't want raw. remove from pan. Add eggs that are beaten with (1 tbls per egg) milk and a dash of salt and pepper to pan. Cover and cook eggs for an omelet on med-low heat until it starts to puff up. uncover add veggies and cheese to one half. Fold egg over top of veggies, turn to low, cover. heat until cheese melts (1-2 min). Serve on a plate with 2 tbls nonfat plain yogurt
