2 eggs Egg, Scrambled
0.25 cup, chopped Broccoli
1 oz Mozzarella, Part Skim Milk Cheese
0.25 cup slices Carrots
0.25 cup Spinach
0.25 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
3 cake Lightly Salted Rice Cakes

Recipe Directions for omelet

steamed all veg except tomatoes, and threw into egg mix. Added some seasonings (salt, pepper, italian, onion powder) and then ate it with rice cakes.
