Tasty cheese omelet with onions, black olives, and chives.

Recipe Ingredients for Omelet for One #2

1/2 oz onion, chopped fine
1/2 oz black olives, chopped
1/4 tsp low fat margarine
1/4 cup egg substitute
1 tbl skim milk
1/2 tsp chives
1/4 tsp parsley
1 tbl reduced fat shredded cheese, divided

Recipe Directions for Omelet for One #2

  1. Combine chopped onion and olives together with margarine in microwave safe bowl. Microwave about 50 seconds, 50% power, or until tender.

  2. Add eggs, chives, parsley, and 1/2 tbl cheese, and stir briskly until well-blended.

  3. Pour into microwave omelet maker, 1 minute on high. Turn onto plate, if middle bottom of omelet is not fully cooked, return to microwave and cook 20 seconds at a time, until center is fully cooked.

  4. Sprinkle remaining cheese on top. Serve.

  5. TIP: add 2 Tbl salsa for extra treat (adds about 5 calories).
