4 large eggs
1 1/2 cups liquid egg substitute
4 oz diced ham or Canadian bacon
1 cup fresh or frozen corn kernels
3 green onions
1 teaspoon crumbled dried thyme
3 oz feta cheese, crumbled
1 teaspoon salt
1/2 teaspoon pepper

mix it all together, poor in sprayed cupcake tins, bake in 375 for 20 to 25 minutes.
