Recipe Ingredients for Omelet II

6 egg whites
2 egg yolks
1/3 cup onion, diced
1 cup swiss chard
1 cup kale
1 cup summer squash
1 cup broccoli
1 tbsp olive oil

Recipe Directions for Omelet II

  1. saute vegetables separately, use mushrooms and carrots too if available.

  2. Set aside in rows on large plate.

  3. Lightly scramble eggs, so marblely looking,

  4. Saute eggs with a little s&p (red chili flakes) til cooked

  5. al dente, not too cooked.

  6. Divide all vegs and eggs onto 3 plates, reserve 2 for next two days - eat one!

  7. Other servings can reheat in microwave for 1.5 mins.
