Recipe Ingredients for Omelet Fritatta

1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 cup, chopped Onions
1 cup raw Mushrooms
2 serving Fully Cooked Bacon
4 large Egg, Whole
1/4 cup Milk, Lowfat, Fluid, 1% Milkfat
2 serving 2% Milk Reduced Fat Mild Cheddar
1/4 tsp. salt

Recipe Directions for Omelet Fritatta

  1. Cut vegetables and mushrooms into diced pieces of desired size and saute with crumbled bacon in a nonstick skillet prepared with nonstick spray; cook to desired tenderness, stirring occasionally, adding nonstick spray.

  2. Beat eggs with milk and salt; pour into skillet over sauteed veggies. Cook covered over medium heat till eggs are almost set; turn to cook second side (it will come apart, but no worries).

  3. When eggs are almost completely firmly cooked, top with grated cheese; cover till cheese is melted.

  4. Serve with whole-grain toast and salsa.
