One delicious omelet served hot cannot be too healthy.

Recipe Ingredients for Omelet for breakfast or brunch

1 whole egg
1 slice turkey bacon
2 tbsp white or red onion
1 tbsp chives
2 tbsp green pepper
1 tsp red pepper
1 tsp basil
1 tsp virgin olive oil

Recipe Directions for Omelet for breakfast or brunch

  1. Chop condiments; bacon, onions, chives and peppers. Set aside in small bowl.

  2. Mix egg, basil, red pepper until egg frothing occurs.

  3. Set aside in the mixer or bowl.

  4. Spread virgin olive oil into 6 inch non-stick skillet, coat bottom and begin heating at medium heat. When oil becomes hot, place chives, onions, bacon and green pepper in skillet.

  5. Heat at medium heat until light browning occurs. Remove to side in small bowl.

  6. Caution: You might cut your heat off momentarily until you are ready to replace skillet on burner and start cooking the eggs.

  7. Pour eggs into hot skillet. Spread the eggs evenly by tilting the skillet.

  8. Spread

  9. Allow eggs to cook until they begin to coagulate (harden) on bottom.

  10. Immediately spread chopped condiments evenly over one half of the eggs.

  11. Tilt skillet slightly to get better leverage and fold the unspread egg over the top of the other side that has the condiments. Remove from heat by tilting the skillet onto a serving plate. Let stand for a couple of minutes to allow the eggs to harden.

  12. Serve with coffee or milk, toast, cheese and salsa, maybe jalapenos to those wishing a good bite as the eggs are consumed.

  14. Pour mixed egg into skillet using what is left of bacon grease and olive oil. Spread evenly

  15. Cook at medium heat until egg solidifies on bottom
