This simply and very low calorie, yet extremely filling, noodle soup is quick and easy to prepare and fills me up for hours. You can cook however many portions you like, and keep it in the fridge. It makes an excellent main course, but it would also work as a bulky starter or snack.

Recipe Ingredients for Olly's spicy noodle soup

1 serving Sherwood's Fine Egg Noodles
1 serving Tesco's stir fry mixed vegetables
1 tbsp Soy Sauce
1 serving Herbes de Provence
1/6 tsp Chinese Five Spice Blend Grinder

Recipe Directions for Olly's spicy noodle soup

  1. Boil and reduce the vegetables, adding a vegetable stock cube if you want.

  2. Add spices to taste to the reduced vegetables - use chinese 5 spice and black pepper as your base, adding soy sauce if you choose, and add other spices if you want.

  3. Allow the vegetables to simmer while you boil the noodles - they take four minutes on a hard boil.

  4. Drain the noodles, rinse in cold water, and add them to the simmering vegetables.

  5. Do not drain the sauce! It provides the bulk of the flavour in the dish.

  6. Enjoy!
