Variation on a Robin miller recipe

Recipe Ingredients for Olive Stuffed Pork Loin

2 pound pork loin
1/2 cup pitted Kalamata olives
3 tablespoons olive oil
2 tablespoons red wine vinegar
2 tablespoons honey
2 teaspoons Dijon mustard
1 teaspoon dried thyme
8 cloves garlic
1/4 teaspoon salt
1 teaspoon ground black pepper

Recipe Directions for Olive Stuffed Pork Loin

  1. Season pork

  2. Cut slits in pork 1" deep

  3. Stuff olives and garlic in alternate slits

  4. Sear over medium heat with 1 TB of olive oil, remove from heat

  5. Whisk together remaining ingredients

  6. Pour mixture all over pork

  7. Bake 30 minutes at 400 degrees until temp reaches 150-160

  8. Let stand 10 minutes before cutting into 1" thick slices
