A healthier way of eating pastry. Works well in either savoury or sweet recipes. Just add a tbs sugar to dry ingredients.

Recipe Ingredients for OLIVE OIL PASTRY

2/3 cup (144 gms) virgin olive oil
2 1/2 cups (320 gms) all purpose flour
1 tsp salt
1 tsp baking powder
1/2 cup (110 gms) water, ice cold
1 tsp vinegar

Recipe Directions for OLIVE OIL PASTRY

  1. Freeze olive oil, 3 to 4 hours

  2. Preheat oven 190c

  3. Once frozen, put flour, salt and baking powder in food processor and pulse a few times to mix.

  4. Add remaining ingredients and pulse until dough ball forms.

  5. Wrap in cling film and cool in fridge an hour.

  6. Roll out between 2 sheets of cling film.

  7. Makes 2 small (40 mins) or 1 large pie (45/50 mins)
