Olive Oil Basil Muffins Recipe

These puff up, so they work well as single servings in a mini muffin pan. If you want to double up on your servings, use a regular muffin tin. These are great with pasta salad or as a breakfast or dessert muffin drizzled with honey, or spread with cream cheese, and served alongside fruit.

Recipe Ingredients for Olive Oil Basil Muffins

4 eggs
1/2 cup sugar
1/2 cup extra virgin olive oil
3 g fresh basil, finely chopped (about 1/4 cup loose)
1 1/2 cup whole wheat flour
1 tbsp baking powder
1/2 tsp salt

Recipe Directions for Olive Oil Basil Muffins

  1. Preheat oven to 325 degrees.

  2. Whisk eggs together until frothy.

  3. Add sugar and continue to whisk vigorously.

  4. Slowly pour in olive oil while continuing to whisk.

  5. Stir in chopped fresh basil.

  6. Sift together the flour, salt and baking powder.

  7. Slowly add to egg mix, stirring after each addition.

  8. Spray two mini muffin tins with Pam for baking. Spray only the bottom of the cup, not the sides!

  9. Divide the mixture evenly between the cups in the two pans. You should have just enough if you fill them right below the brim. These will rise!

  10. Bake at 325 degrees for 10 minutes, then rotate the pans and bake for an additional 10 minutes.
