Fun alternative to traditional Ketchup.

Recipe Ingredients for Olive Ketchup

1/2 c Kalamata olives, pitted
1/4 c parsley, fresh chopped
2 scallions, coarsely chopped
1 clove garlic, crushed and peeled
1 T extra-virgin olive oil
1 t. red wine vinegar
2 t. tomato paste

Recipe Directions for Olive Ketchup

  1. Combine olives, parsley, scallions, garlic, oil and vinegar in a food processor. Pulse until finely chopped.

  2. Transfer to a small bowl and mix in tomato paste.

  3. Cover and refrigerate for up to 4 days.
