Recipe might be heavy on the Kale - the recipe I was copying said "1/4 bunch." Also, you certainly could cook a slice or two of bacon and chop, instead of the bacon bits.

Recipe Ingredients for Olive Garden Zuppa Toscana

16 oz Lean Turkey Italian Sausage
1.5 tsp Red Pepper
1.25 medium White Onion
4 tbsp Real Bacon Bits
2 clove Garlic
5 cup (8 fl oz) Water
5 cup Soup, Chicken Broth
1 cup Cream, Fluid, Half And Half
16 oz Potatoes, White, Flesh And Skin
2 cup, chopped Kale

Recipe Directions for Olive Garden Zuppa Toscana

  1. Chop onions and garlic. Slice potatoes. Chop kale into large pieces (remember it shrinks as it cooks).

  2. Saute sausage and crushed red pepper in a large pot. Remove, drain excess fat and set aside (refrigerate for food safety).

  3. In same pot, saute bacon, onions and garlic over medium low heat for about 15 min. or until onions are soft.

  4. Add chicken broth and water and heat until it starts to boil.

  5. Add potatoes to pot and cook until soft, about 1/2 hour.

  6. Add the cream and cook until just heated through.

  7. Stir in the sausage and kale, let all heat through and serve.
