Rustic Veggie Soup from Mens Health Magazine w/ Del's twist

Recipe Ingredients for Olga's Tuscany Vegetable Soup

2 cups chard
2 cups parsley
3/4 cup extra virgin olive oil
2 onions
2 carrots
2 cups white beans
2 cups cabbage
2 cups mushrooms
2 celery stalks
3 cups water
4 oz tomato paste
1 cup chives
1 clove garlic
1 salt
1 pepper

Recipe Directions for Olga's Tuscany Vegetable Soup

  1. soften half of hard veggies in half of oil over medium heat

  2. then soften the other half with remaining oil

  3. mix in greens until soft not brown

  4. add tomato paste and stir

  5. add partially mashed beans and juice (leave some whole)

  6. add enough water to make stewy not soupy

  7. keep coooking, tasting, and seasoning

  8. cook at least 1 hour
